To make chinese oil, heat oil in a small saucepan over medium heat.
Add ginger and garlic, and cook until fragrant.
Remove from heat, and set aside.2.
In a bowl, combine chicken stock, water, and salt.
Pour in a few tablespoons of water, whisking constantly.
Cover and simmer for 20 minutes.3.
Add the vegetables and cook for 2 minutes.
Add 1/2 teaspoon each of soy sauce, mirin, sesame oil, and brown sugar.
Cook until the vegetables are tender.4.
Add in some fresh ginger and cook 1 minute.
Add a few drops of the oil and continue to cook for about 1 minute more.5.
Once all of the vegetables have been cooked, add in 1/4 cup of sesame paste, and stir until it’s melted.
Add more oil as needed to taste.6.
Once the vegetables, chicken stock and sesame sauce have all been cooked and thickened, you can stir in a little bit of the rice vinegar.
Pour the mixture into a serving bowl and serve with rice or noodles.
